Salads and raw bowls can be kind of bland if you have nothing to amp it up with. My most popular suggestion is “you can always opt for a bean salad to put on top!”

RECIPE

In a bowl combine:

1 can chickpeas (or peas and beans of your choice)

1 can sweet corn

1/2 cup Chinese celery finely chopped

3-4 cloves garlic minced

1/2 cup roughly chopped cilantro

1/2 red onion finely diced

3 small re bell peppers finely diced

1/4 cup chopped pickled carrots (sliced carrots soaked in vinegar with black peppercorns and garlic)

2 limes zested and juiced

Salt and black pepper to taste

MIX!

Let sit for at least 15-20 minutes before serving.
