Our trip to New Mexico was a very special one and it was during this time that Tash & Josh Kitchen truly went through a transformation and started becoming what it is today. We were just live streamers who shared our home cooking but now we are a foodie community 200K strong! If it wasn’t for our supportive friends who egged us on to create this platform we would have still been cooking up a storm, but not sharing it as we do now.

So, without further ado, we have some pictures and a few stories to share with you. First! Lets have a look at Queens, NY from the sky!

That red line of lights is the Belt Parkway; a major highway that runs through Queens and Brooklyn.

Now we can get to the magic of New Mexico!
Starting with this incredible Sunset we caught from the Rooftop Restaurant at the Sandia Resort and Casino.

A New Mexico Sunset, The Sandia Mountains.When the sun is setting the mountains turn the color of watermelon. Sandia means Watermelon. We definitely like Watermelon. This was one of the most breath-taking sunsets we have ever witnessed and we are so grateful to have had the opportunity to experience it.If you ever take a trip to Albuquerque be sure to visit the casino, not just to gamble, but to have a quiet dinner and see this spectacular sunset over these majestic mountains. The mountain is said to turn red because of the red soil that it is made up of. When the sun hits it, the color comes out and those mountains sing.

Next stop, a ride along the highway to check out the scenery. When you do this be sure to look out for these little signs that the state of New Mexico decided they NEEDED to have. (we found this incredibly funny; they are so cute in NM)

Also, make sure you look out for that Old American Icon, Historic Road 66

This super long highway was finished in 1926 and allowed travelers to drive through EIGHT states from Chicago to Los Angeles. For over almost a 100 years Route 66 has been held in the hearts of Americans everywhere because it was a symbol of freedom. Artists, adventurers and dreamers have been hopping on this highway to have an experience of a lifetime since it was built and they still continue to seek it out.

Nowadays Route 66 no longer exists but it is still visited and appreciated by not only Americans but foreigners as well.



 

We did not get the chance to visit any of the Pueblos/towns but we were fortunate to see plenty of Indian art and taste authentic Indian cuisine at the Indian Pueblo Cultural Center.

New Mexico was voted America’s most artistic state and we could see why; everywhere you turn you will find all kinds of art, but keep in mind that the architecture is also breath taking.

NOW LETS TALK ABOUT CHILE!!

        

Green OR Red CHILE?

New Mexicans sure do love their Green and Red Chile and most people will have a favorite. Ours was the Green but we figured we still need to try more to be sure. If you want to try both on your food while eating out, be sure to ask for ‘Christmas.’ That’s how the locals do it!Yes, we needed to have a bit of fun with the Chile Arches.

We visited this little mining town the same day we visited Santa Fe. Really cool seeing the old locomotives in an old mining town.

And now for the Grand Finale!! Did you guess it? Of course…FOOD!!!!!!!!

LEWIS CASA RAMEN

                        BROTH

  • Water
  • Soy Sauce
  • Mirin
  • Sesame Oil
  • Rice Wine Vinegar
  • Hoisin
  • Salt
  • Sugar
  • Beef Bones
  • Pork Shoulder

TOPPINGS

  • Onions
  • Green Onions
  • Garlic
  • Ginger
  • Eggs
  • Bean Sprouts
  • Fresh Cilantro
  • Lime
  • Fresh Mint
  • Noodles

BROTH

  1. Sear Pork Shoulder on high heat until there is agood crust on the outside. (Don’t force meat to move, it will move when it’s ready!)
  2. Char 1 large onion, 1 head of garlic, 1 large pieceof ginger, and 2 green onions (All with skins on!). Leave in a bowl and cover with plastic wrap. Afterit cools, remove the skins).
  3. Put beef bones, seared pork shoulder, and charredaromatics into a large pot. Add water until an inchabove all ingredients.
  4. Bring to a rolling boil, then add Soy Sauce, Mirin,Sesame Oil, Rice Wine Vinegar, Salt, and Pepper.
  5. Once pork is cooked take it out to make the Sticky Pork!
  6. Let this broth boil at a med-high heat. The longerit boils, the more concentrated the flavor! We recommend at least 2 hours ^.^

STICKY PORK

  1. In a deep sauce pan, add Soy Sauce, Mirin, SesameOil, Hoisin, Rice Wine Vinegar, Sugar, Ginger,Green Onion and Garlic.
  2. Bring the marinade to a rolling boil and reduceuntil sauce is sticky or coating the back of aspoon.
  3. Once the sauce is at the consistency you like, addpork shoulder and baste until completely immersedin sauce.
  4. Rest, then slice!

TOPPINGS

  1. Soaked and Chopped Onion
  2. Chopped Green onion
  3. Chopped Cilantro
  4. Chopped Mint
  5. Bean Sprouts
  6. Soy Egg
  7. Boil eggs for 6 min 50 sec.
  8. Shock and cool eggs in ice bath.
  9. Submerge eggs in marinade of Soy Sauce, Mirin,Sugar, Rice Wine Vinegar, and Water for 30 minto 6 hours. (Longer the Steep, MoreConcentrated the Flavor.)

PLATING

  1. Add noodles to a deep bowl.
  2. Add Toppings and Sticky Pork around the noodles
  3. Slice the Soy Egg in half and place next to thepork shoulder.
  4. Add broth and two lime wedges.

Drink of the Month

Sandia Sunset

In honor of our trip:

  • 3 Slices Cucumber ((1 for garnish))
  • 10 Blueberries
  • 5 Blackberries
  • 2 Lime wedges
  • 8-10 mint leaves
  • 1 extra mint sprig ( (for garnish))
  • 2 tbsp Sugar
  • ½ oz Simple Syrup ((sugar:water, 1:1))
  • ½ oz Vodka
  • 3 tbsp Ginger Beer
  • Club Soda ((to fill))
  • Lime Wheel ((garnish))
  1. In a mixing glass Muddle (mash) limes wedges, mint,5 Blueberries, 2 Cucumber slices and Blackberries with Sugar.
  2. Pour mixture into a Balloon Glass, add ice (about3/4 of the glass, ice).
  3. Add Vodka, Ginger Beer, Simple Syrup and fill with Club Soda to 1/2 way of glass (widest part of glass).
  4. Mix drink well with a spoon. Garnish with a cucumber slice, lime wheel and a mint sprig.
